Taco gobernador

A typical dish found at any beach in Mexico is the delicious "Taco Gobernador" made with shrimp. However, what some may not know is that this dish is proudly Sinaloan and was created in the port city of Mazatlán.
There are multiple stories and myths about its creation, but its true origin takes us to the restaurant "Los Arcos" in the city of Mazatlán, one of the most popular in the port. It is said that in the early 1990s, during one of the work tours of the then governor of the state, Francisco Labastida Ochoa, to the fishing city, he decided to reserve a table at the restaurant. This news quickly reached the owner of the place, and upon such an important visit, he entrusted the chef with preparing a unique and special dish to surprise the governor
Edgar Angulo, the restaurant owner, recalled that in previous conversations with Labastida Ochoa, the governor mentioned a very good taco that his wife used to make for him with shredded shrimp, better than any other. So, with the help of the chef, the owner delved into the kitchen to try different recipes and ingredients to impress the governor.
After several attempts and Labastida's arrival, they presented him with the new creation, which he immediately loved. When he asked for its name, he was told it didn't have one; it had been created especially for him. Quickly, the governor named it the "Taco Gobernador."
